Think Nocino, only not Italian hills, but Flevoland sea clay*.
We pick the green, unripe walnuts exactly around the longest day at the end of June. At that moment, the shell is full of essential oils. Then we let the green walnuts mature on alcohol for twelve months. For a year, the drink slowly builds character and taste: licorice, coffee cookies and spices.
Drink it pure, on the rocks or as a trattoria dessert over a scoop of vanilla walnut ice cream. Or as an instant classic with cheese, chocolate, figs, pear or caramel. Mmmmm!
*Developed in collaboration with Weerwoud with only ingredients from their farm on Utopia Island. 50% of the proceeds go to Stichting Weerwoud.
